Star Anise (Badian Khatai)

Star anise, also called badian khatai, has a sweet liquorice-like aroma and a strong flavour that infuses gradually. Usually one or two pieces are enough for a recipe.

Best for: chai, biryani, broths, sauces, desserts and homemade spice blends. Simmer it whole, then remove before serving, or grind a small amount when the recipe requires powder.

Ingredient: whole star anise.

Storage: Keep airtight in a cool, dry place away from heat, sunlight and moisture.
